Continue process of softening, layering, and freezing with remaining colors, layering blue on top of purple and green on top of blue in the first pan, and layering orange on top of yellow and red on top of orange in the second pan.

To assemble, carefully release ice cream cakes from springform pans. Remove parchment collars. Using a large spatula, carefully transfer red-orange-yellow layer onto green-blue-purple layer. Return to freezer until ready to serve. Leaving the assembled cake on top of the springform pan’s metal round will be easiest! Top with meringues or other desired garnish, slice into wedges, and serve.
